What have we been up to this week with cooking and the farm?
My sons and I made a big batch of Oatmeal Raisin Muffins (click for this healthy recipe, it is here on the blog).
Not too much cooking going on, as a stomach bug is being passed around our house. No one feels like eating much. Except the muffins, of course! :-)
Believe it or not, even though the temperature outside is hovering around 0, I am growing vegetables right now. Nope, not at the farm. The farm is tucked in for the winter under it's blanket of snow. I'm growing right in my kitchen. Sprouts, that is. I posted about this last winter here on the blog, click here to learn how to do it (it's easy!).
No, sorry, the green Matchbox car didn't sprout from my jar. Although that would be a neat trick.
Sprouts are a great winter-alternative green veggie. You can use them on sandwiches, in stir fry, or as a salad mixed with some other veggies (I use our winter storage carrots and shred them along with some radishes I still have from the fall garden).
In other news, I added the Recycled Tie Apron (click to see the blog posting) to my Etsy Store. Etsy is an online store where crafters of all types can sell their products. This is where I sell all the aprons I create.

Oatmeal-Raisin Muffins
Several days ago I posted the recipe for crockpot oatmeal. I hope you saved some of the leftover oatmeal to make these delicious, all-natural muffins. You may want to double or triple the batch. Kids love these.
Leftover Oatmeal-Raisin Muffins
3 tablespoons oil
2 tablespoons molasses
1 egg
2/3 cup milk
1/2 cup cooked oatmeal
1/2 cup raisins (dried cranberries also do well here)
1 cup whole wheat flour
1 1/2 teaspoons baking powder
pinch salt
1/2 teaspoon ground cinnamon
Preheat oven to 375 degrees. Oil muffin tins. Combine all. Fill muffin tins 3/4 way full. Bake 15-20 minutes, or until knife inserted in center comes out dry. Let cool before removing from muffin tins.
Makes 8 muffins.
