2 cups arugula
1 clove garlic
1/2 cup extra virgin olive oil
dash of salt
Combine all in food processor until smooth.

Phil likes arugula but I have never found a lot of use for pesto. I have used it in a sandwich that we made at a restaurant but I have never seen pesto used otherwise.
