Recipe: Crockpot Egg Casserole / Quiche

I have seen crockpot egg recipes before, but never tried one. As we have a lot of eggs from the chickens right now, I decided to give it a go. It worked great!

You could add anything to this you wanted, but here is what I used:
-1 potato, chopped small
-1/4 cup chopped frozen onion
-1/4 cup chopped frozen pepper
-2 cups fresh garden spinach, torn into pieces
-1 dozen large eggs
-2 cups milk

First coat the inside of the crockpot with oil to prevent sticking.
Next add the vegetables, meat, whatever you plan on using.
Last, whisk the eggs & milk together and pour over the entire mixture.

The tricky part of this recipe is the cooking time. It doesn't need to cook long - only 5-6 hours. So I plugged the crockpot into an electric timer (the type used to turn lights on & off when people go on vacation). I set it to turn on at midnight and off at 6 am.
