Our kale crop is at the baby stages here on the farm, and I harvested the first batches last week. This is a great soup for a rainy day! My mother-in-law's recipe. Great served with garlic bread and a fresh garden salad. Even my pickiest son loves this one so long as he can't see the kale :-) - he ate 4 small servings yesterday!
Kale Soup with White Beans & Sausage
1 bag kale
1/2 pound pork sausage
1 can white beans, or 2 cups cooked dry beans
1 small onion, chopped
1 cup dry whole wheat pasta
8 cups chicken broth
Salt & Pepper
1 teaspoon garlic powder
Saute onion & sausage. Place chicken broth in a soup pot and add cooked onion & sausage. Bring to a boil. Add pasta, beans, and kale & cook until pasta is slightly tender. Add 1 teaspoon garlic powder, and salt & pepper to taste.
You can easily double or triple this recipe for a huge batch, and any leftovers (doubtful) can be frozen.
