This Saturday, May 14, marks the first Freeport Farmers Market of the season! I'll be at market, located in the CVS parking lot in Freeport (corner of South & West streets, near Higher Grounds Coffee Shop), from 7:30-11 am. Look for the blue tent with the Wishful Acres Farm sign. If you're unable to attend market, but would like your order delivered free of charge (Freeport & outlying area only), please email your order to me (wishfulacres@gmail.com) by noon on Friday (available products are listed below - vegetables and plants). I'll be delivering orders after farmers market on Saturday, so you can expect your order to arrive sometime between 11:30-1:00. If you won't be home, you can simply leave the money, and direct me to a place you'd like your order left (a porch, cooler, etc).
This week marks the first harvest of my awesome Organic Salad Mix. This gourmet blend changes weekly, depending upon what is in season, but it always has a mix of baby lettuces & greens, plus more. This week, the Salad Mix will feature beautiful Baby Red & Green Romaine lettuces, baby greens, and succulent sugar snap pea tendrils. You won't taste better salad, it's the freshest you'll get, harvested the day before you receive it! (Did you know the bagged salad mixes in the store are at least a week old before they even reach the store?!). At the end of this email is a recipe for my favorite salad dressing, a Creamy Balsamic Vinaigrette. The organic salad mix is triple washed, bagged, and ready to eat. Approximately half gallon - serves 4-8, depending upon size of salad served. $2.50 per bag.
Eggs, Eggs, Eggs! Lots available this week! The pastured hens are laying lots of big, beautiful brown eggs. These are extra-large in size, and the yolks are a beautiful healthy orange color you won't see in store-bought eggs, with a rich taste and firm white. At the end of this email is a recipe for a homemade all-from-scratch Breakfast Skillet. I'll have plenty of eggs available for free Saturday delivery, $3 per dozen.
The Garlic Spinach is still being harvested as well. This slightly bitter green is not a true spinach, rather a delicious relative. It's a highly nutritious leafy green that has a mild garlic flavor. I made a great Pasta Salad with Garlic Spinach and Balsamic Vinaigrette this past week, you can view the recipe at the end of this message. Garlic Spinach is also great on salads mixed with your lettuce. One bunch should be enough to make 2-3 batches of pesto, or several mixed salads. $2.50 per bag, half gallon.

Pasta Salad with Garlic Spinach and Creamy Balsamic Vinaigrette:
-1 box whole wheat pasta, cooked.
-1 bunch Garlic Spinach, leaves torn off, stirred into pasta salad.
-1 Tablespoon parmesan cheese, sprinkled on top when served
-Creamy Balsamic Vinaigrette Dressing:
1 cup extra virgin olive oil
1/3 cup Balsamic Vinegar
1 tablespoon mayonnaise
salt & pepper to taste
Mix all ingredients of dressing well. (I put into a tupperware container & shake it to blend.)
Cook pasta. When cool, place pasta into bowl with Garlic Spinach. Coat with dressing, place into serving bowl and sprinkle with Parmesan cheese.
-Creamy Balsamic Vinaigrette Dressing:
1 cup extra virgin olive oil
1/3 cup Balsamic Vinegar
1 tablespoon mayonnaise
salt & pepper to taste
