Bread Gnocci recipe

This is one of my favorite Italian comfort foods, and a great way to use some leftover homemade whole wheat bread.  This recipe was adapted from a Rachel Ray recipe.

4 cups day-old whole wheat bread, chopped into bite-sized squares
4 tablespoons extra-virgin olive oil
4 cloves garlic, finely chopped
Salt and pepper
2 cups favorite marinara sauce (homemade or canned)
1-2 tablespoons dried sweet basil
2 cups shredded mozzarella

Heat a large skillet over medium heat.  Add extra-virgin olive oil and garlic to the skillet. When hot, add bread.  Season the bread with salt and pepper.



Toss and cook the bread 7 to 8 minutes then add the marinara (add some chopped fresh tomatoes if they are in season). Sprinkle on the basil.  Turn to coat and warm the marinara sauce, 3 to 4 minutes.



Then top with cheese.



Put a lid over the skillet, put heat down to low, and cook until cheese is melted.
