This is one of my all-time favorite soups. Everyone in our house loves it, even the boys. Hope you enjoy it, too!
Italian Tortellini Soup
1 pound Italian sausage
1 cup chopped onion
3 cloves garlic, chopped
5 cups beef broth
1/2 cup water
1/2 cup red wine
4 large tomatoes, peeled & chopped (or 1 quart home-canned, or 2 cans store-bought)
1 cup chopped carrots
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 can tomato paste
1 1/2 cups sliced zucchini
8 oz. package tortellini
salt & pepper
Brown sausage. Saute onion and garlic. Stir in broth, water, wine, carrots, basil, oregano, tomatoes, tomato sauce, and zucchini. Bring to a boil. Reduce heat to low and simmer for 30 minutes. Stir in tortellini and cook until tortellini is done (read package of tortellini to see how long it should be boiled). Salt & pepper to taste.
Serve with Parmesan cheese.

yummy! that looks good! I have tortellini's too! I don't have anymore canned tomatoes though...it's really been cramping my style. I'm going to make that!
