Oven Fries & Chili Cheese Fries

 
A healthier version of french fries, these are really just roasted potato wedges, and we love these in our house.  Just don't tell my sons they're not really "french fries", they have no idea I'm feeding them something healthy.

Gardeners, a great way to use up those potatoes.  I used our homegrown multicolored organic potatoes, so don't be alarmed when you see blue & red-fleshed potatoes in these pictures!

Oven Fries recipe

Potatoes
Canola Oil
Salt & Pepper
Garlic powder if desired

Wash the potatoes.  Peel if desired (my sons prefer them peeled)  Slice them into wedges.

To cut into wedges, just slice the potato in half.







Then cut the half into half, and repeat once more.




One potato will give you 8 wedges.  Cut enough to fill the bottom of a roasting pan.



Toss the potatoes into a roasting pan.

Coat with oil, sprinkle with salt, pepper, and garlic powder (if desired) & toss them around to coat.  (not a lot of oil, just a light coating will do fine. For a roasting pan full of potatoes, you'll only need about 2-3 tablespoons oil)
 



 
Put into a preheated 450 degree oven for about 30 minutes.  (After 15 minutes, use a spatula to flip them around so both sides get cooked.)

Remove from oven & allow to cool for 5 minutes.  May need additional seasoning - salt to taste.




Enjoy as is, or take it to another level with.... chili cheese oven fries!  And these are actually healthy. No processed ingredients at all, just whole foods.

A day before making the oven fries, I pulled a container of our homemade vegetable-heavy chili from the freezer so it could thaw.  Most of the ingredients in the chili came from our garden as well.



I poured the chili over the fries.



Shredded some Wisconsin sharp Cheddar Cheese on top.  There are definite benefits to living on the Wisconsin border, the main one for me being access to fresh, awesome, discounted cheese.  I love cheese....





Put it back into the oven, which you can just leave on after taking the oven fries out.  Bake it for 5-10 minutes, or until the chili is warm and the cheese is melted.




Yum!!!!
