The first of the winter squash is coming in from the garden.
Pictured here are two varieties, Jarrandale (the blue-green one) and Galeux d'Eysines (the orange one).
Here is the way I grew up eating winter squash, and it's still my favorite. Simple and easy.
Baked Winter Squash
Winter squash of choice, sliced in half lengthwise, seeds removed
Butter
Brown sugar
Cut the winter squash in half lengthwise.
Use a spoon to empty out the seed cavity.
Into the empty seed cavity drop in a pat of butter and a couple spoonfuls of brown sugar.
Pop into the oven at 350 degrees for 1 hour.
Smells like autumn...
