The Facts: Nutritious Pasture-Raised Eggs

The most recent edition of Mother Earth News magazine has an article about raising chickens.  In the article, the nutrition facts of eggs from pastured hens (pastured means they are allowed access to the outdoors, like ours here at Wishful Acres).  The numbers speak for themselves:

Eggs from hens raised where they can eat seeds, grass and bugs are far more nutritious than eggs from confined hens in factory farms.  Mother Earth News research shows that eggs from hens raised on pasture have:
  • 1/3 less cholesterol
  • 1/4 less saturated fat
  • 2/3 more vitamin A
  • 2 times more omega-3 fatty acids
  • 3 times more vitamin E
  • 7 times more beta carotene
  • 4 to 6 times more vitamin D
Our chickens here at Wishful Acres are given access to the outdoors from sunup to sundown.  In addition, they are fed a special-ordered all-natural feed.   I may start calling these Superman eggs!

Speaking of eggs, remember this recipe from last summer's tomato season?  I can't wait to have a delicious heirloom tomato on this sandwich with our own hand-raised eggs!  Oh, and maybe a few sprigs of our fresh dill tossed on as well.  Divine.
