About the artist instructing your class: Mia Rudolph is a local artist who works in acrylics, color pencil, and other mediums. She is a full-time school nurse and has 3 children. Mia attended WIU and studied studio art. It is Mia's colorful artwork that we have on display in our taproom here at Wishful Acres Farm & Brewery!

Community Supported Agriculture (CSA) Member News

Our recipe database contains cooking ideas for all the vegetables we grow - link here.
Farm CSA Members: In your share of organic items this week:
  • Beets - A bag of fall beets!  Beets are delicious roasted, boiled, pickled, etc.  Roasting is our favorite method of eating them, but if you visit our recipe database you'll find many uses!
  • Hakurei -  Hakurei are a Japanese root vegetable.  We refer to them as "mild Japanese radishes", but they are actually classified as "salad turnips".  Typically eaten raw, they are delicious with dips, on salads, etc.
  • Lettuce - Some of our fall lettuce has survived the intense rain we've had on & off for the past couple of months.  This will be a mix of baby Romaine, and green & red oak leaf.
  • Pie Pumpkin (Winter Squash) - Last of the season!  This variety of pumpkin is an heirloom called "Amish Pie Pumpkin". These types of pumpkins are small to medium sized, and are traditionally used for cooking, not carving.  You can use these pie pumpkins to make not only pumpkin pie, but you can also substitute them in any recipe that calls for winter squash (for example, you can use them in place of Butternut Squash in a recipe!)
  • Pac Choi / Bok Choy - a bag of big leaves, great stir fried. Often used in Lo Mein, Stir Fry, Asian Soups, etc.   Also included in this bag with your Pac Choi is  Komatsuna & Tokyo Bekana. Use all of these leaves the same way, they are great in a simple stir fry!
  • Asian Greens-  a bag of mixed Asian greens, great for eating raw or lightly stir frying. You could combine these greens with your pac choi /  bok choy into one big stir fry!  This mix includes Mizuina, Tat Soi, and Scarlet Frills.  A slightly spicy bite in these greens!
  • Kale-  fall kale!  Try a kale salad, soup, or kale chips! Lots of ideas on our recipe page.
  • Mustard Greens- Can be eaten raw mixed into a salad, or cooked. See our recipe page (link above) for cooking ideas!
  • Arugula- fall arugula! This Italian salad green is delicious mixed into salads, or chopped & sprinkled raw onto cooked pizza & pasta
