It's bruschetta time! I like to maximize the farm vegetables when I make it, so I include tender baby squash & sweet onions.
Recipe:
Tomatoes
Fresh Basil
Fresh garlic
Summer squash
Sweet onions
Romano or Parmesan cheese
Extra virgin olive oil
chop veggies, combine in bowl. Add just enough olive oil to coat. Salt & pepper to taste. Sprinkle on grated cheese. Serve over garlic bread. Here is what it looks like served: http://all-natural-mama.blogspot.com/2011/08/bruschetta-serving-picture.html .
