Brrrr.... the calendar says spring, but this week has ended on a decidedly cold, windy note. Great time for a big pot of soup! This is a very easy soup to make, I actually don't use a recipe when I make it but I'll try to get something down for you below. The kids will like this one as well (if serving to kids, cut the pepper & onion into big chunks so they can be easily removed from their bowls before serving so they don't turn up their little noses).
1 lb ground beef or ground turkey, cooked.
10 cups chicken stock
1 jar salsa (I used a full quart jar)
2 bags sweet corn (I used 2 quart bags)
3 onions, chopped
3 sweet peppers, chopped
2-3 cups cooked beans, or refried beans (optional)
spices: I used cumin, chili powder, and salt
Optional toppings:
-shredded cheese
-pickled canned jalapenos
-taco shells or tortilla chips
-plain yogurt or sour cream
First, brown the meat with the onions & peppers. Then add the salsa & chicken stock. When it's come to a boil, add the frozen corn and spices. Cook for about 30 minutes at a simmer. Spoon into bowls, then add optional toppings.
