These waffles are really good! I adapted the recipe to include whole wheat flour, but you can use white if you prefer. I used my homegrown pumpkin (frozen in freezer bags last fall) for this recipe
Pumpkin Spice Waffles
2 cups whole wheat flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice or nutmeg
3 large eggs
1 3/4 cups milk
1/2 cup melted butter
1 cup mashed, cooked pumpkin (or canned)
Mix the wet ingredients first (eggs, milk, butter), whisk until combined. Then add to the rest of the ingredients and mix until combined.
Cook on a waffle maker.
Hopefully you'll have enough batter. My youngest son was cleaning out the bowl while I was still trying to make the waffles!
